PALEO CELERY SEED SALAD DRESSING

It's hard to find a paleo friendly dressing at my local stores, and I was getting a little tired of just plain olive oil and balsamic vinegar, so I decided to whip up something a little more flavorful to go with my paleo version of a cobb salad. Can I just mention how delicious homemade salads are? Yuuuumy! Anyway, the dressing was tasty and so easy to make (no cooking required!) and so I decided it was a keeper. You can also add some prepared ground mustard to give it a little kick, or some fresh herbs to make it more savory.
To make the salad as pictured, use 2 carrots (peeled and chopped), 1/2 cup small red tomatoes (cut in half), 1/2 cup small yellow tomatoes (cut in half), 1 ripe avocado (chopped), 6 slices of bacon (cooked and chopped), 2 hard boiled eggs (peeled and chopped), 1 large boneless skinless chicken breast (grilled and seasoned with sea salt and black pepper) and 3 cups of fresh spinach. I also sprinkled a little sea salt and fresh ground black pepper over the salad before eating. You can add or remove any of the ingredients and make the salad with your favorite vegetables and proteins.

- 1 tsp. apple cider vinegar
- 1/2 small onion, peeled and quartered
- 1 Tbsp. raw honey
- 1/4 tsp. celery seed
- Dash garlic powder
- Sea salt (to taste)
- Ground black pepper (to taste)
Equipment:
- Measuring spoons
- Measuring cups
- Food processor or blender
Directions:
1. Combine all ingredients in food processor or blender and blend until smooth. Add sea salt and ground black pepper to taste.
2. Store in the refrigerator until ready to serve.
