PALEO ALMOND MILK

I love cereal. When I was pregnant with my first child I ate frosted cereals every single day by the bowlful. And when I say bowl I mean a HUGE mixing bowl. No joke. I would shovel it into my mouth with a big serving spoon and sometimes go back for seconds. Needless to say, I gained a few more pounds than I probably should have.
And now that I don't drink dairy, that leaves delicious nut milk as an alternative to cow juice. I have a hard time finding almond milk that doesn't have any sugar or additives, so I like to make my own. Plus is it is a raw food which is always a bonus! My favorite use for it is to throw slivered almonds, grated coconut and some dried fruits in a bowl and pour almond milk over it. It is so yummy, plus it satisfies my cereal cravings.
You can make your almond milk plain by using just almonds and milk, or you can add a little spice and sweetness by using raw honey, vanilla extract and/or cinnamon. If you don't like almonds you can also make cashew milk or other nut milks. Almond milk will last 3-4 days in the fridge, unless it finds its way into a large mixing bowl co-mingling with cereal. In which case it will last about 5 minutes.

- 2 Tbsp. raw honey (optional)

- Strainer
- Blender
- Nut Milk Bag
- Pitcher

1. Place 1 cup of raw almonds in a bowl and cover with water. Allow to soak overnight. Strain the almonds and place them in a blender. Add 4 cups of water and optional ingredients, then blend on high for 3 minutes.
2. Strain the blended almond mixture through a nut milk bag and into a pitcher. Squeeze the nut milk bag until all of the almond milk has been removed. Lay the nut mixture out in a thin layer on a baking sheet to dry, then use as almond meal. Place the almond milk in the fridge to chill for at least 1 hour.
