PALEO "DIRT" CAKE

Do you remember eating dirt cake as a kid? Not only was it FUN but it tasted sooooo good! I remember being so excited when that was my cake for a special occasion. And adults love is just as much as the kids do!
This version is gluten-free and paleo friendly, and you can use it for all sorts of events. I served mine in small glass pots, but you can serve yours in all kinds of things depending on the occasion. You can try some Planting Pots and fake or real flowers, the back of a Kids Dump Truck Toy for birthday parties, a Sand Pails and shovels for a beach themed event, Small mason jars for any occasion or even a Planters tray.
If you don't want to make the gummy worms, you can just top the dirt cake with some fake or real flowers, small dump truck toys, or just stick a shovel in and serve!
This recipe is best when assembled the same day that you plan to eat it, but you can make everything the day before and it will still taste great!

Ingredients:
- One Batch Paleo Brownies
- Two batches Paleo Chocolate Pudding
- 2 cups fruit juice or kombucha
- 4 Tbsp. grass-fed gelatin
Directions:
1. To make the gummy worms, mix the juice and gelatin together in a medium sized saucepan. Bring just to a boil, stirring frequently. Place about 20 plastic straws in a baking pan and pour the gelatin mixture over the straws, making sure they fill up with the gelatin mixture.Place them in the refrigerator to set (about 3 hours or more). To remove from the straws, run them briefly under warm water and then gently squeeze from the bottom up and running your fingers up the straw until they pop out. You can also use a rolling pin and start at the base of the straw and press firmly until the worm pops out of the other end. Set them aside on a baking sheet in the fridge until ready to use.
2. Next, crumble the brownies until they resemble a dirt consistency. Layer the pudding and the crumbled brownie mixture repeatedly, ending with a topping of crumbled brownie to resemble the dirt. Add the worms to the top and store in the refrigerator until ready to serve.
Note: The pudding recipe calls for saving some of the whipped coconut cream for topping. You can either do that and add in a white layer, which looks great, or just combine all of the whipped coconut cream with the cacao powder and banana.
