PALEO RED CABBAGE

My grandfather was in the military and was stationed in many different countries throughout his career, so my mother and grandmother learned to cook many different recipes from all around the world. Growing up we always ate a wide variety of foods, and I was fortunate enough to have two amazing women teach me the ways of the kitchen. We didn't eat meatloaf growing up, we ate steamed seafood curry.... German potato pancakes...coq au vin...bulgogi..... gnocchi.....you get the idea.
I used to love sitting in my Grandma's kitchen and talking to her while she cooked. It wasn't the type of cooking people do today, where they rush to throw everything into one pot and then hope it turns out to be edible. It was the type of cooking that was slow and methodical and beautiful to watch. She used the freshest ingredients and took time to chop everything "just right". You knew that there was a whole lot of love and care going into every meal, and that it was guaranteed to be delicious.
German red cabbage was one of my grandmothers favorite dishes. I didn't care for it much as a child, but now I love it. The combination of the sweet and the sour is so delicious, and it really compliments a main dish of pork or beef. My favorite thing to make it with is a saurbraten or a simple beef roast. - 3 Tbsp. ghee, lard or tallow
- 1/4 cup chopped sweet onion
- 1 large head of red cabbage (about 5-6 cups shredded)
- 2 large green apples, peeled, cored and chopped (about 1 1/2 cups chopped)
- 1/4 cup water
- 1/3 cup apple cider vinegar
- 1/4 cup raw honey
- 1 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
Equipment:
- Chef knife
- Cutting board
- Measuring cups and spoons
- Large saucepan
- Stirring spoon
Directions:
1. Place large saucepan over medium-high heat. Add the ghee and chopped onion and cook for 2 minutes. Add the remaining ingredients and stir to combine
2. Bring everything just to a boil then reduce heat to low, cover, and simmer for 1 1/2 hours or until cabbage is tender. Taste and add additional sea salt or black pepper if desired.
