PALEO MEATY SPAGHETTI SAUCE

I have a secret to my spaghetti sauce. A secret that will no longer be secret because I am about to blab it. And it's not a secret passed down from an Italian grandmother on how to make the most authentic sauce....as a matter of fact an Italian grandmother might not approve. I am sure she would stop shaking her fist at me though once she had a taste of this sauce.
Now don't freak out on me - just trust me on this one. The secret is....wait for it....ground breakfast sausage. That's right, breakfast sausage. The combination of the ground sausage and ground beef makes a delicious sauce that you just have to taste to believe. I have been making spaghetti sauce this way for as long as I can remember. I stumbled upon it when I didn't have enough ground beef and needed more meat for my sauce. I had some ground breakfast sausage in the fridge and so in it went. And voila - best sauce I had ever made.
You can find ground breakfast sausage online or at your local Natural Food store, or you can make your own if you want to. You can also use Italian sausage or all ground beef if you prefer, but I really think you need to try the breakfast sausage! This recipe uses a slow cooker, but you can also cook the sauce on the stove.

Ingredients:
- 1 pd. ground beef
- 1 pd. ground breakfast sausage
- 1 Tbsp. lard/bacon fat or tallow
- 1 small onion, chopped
- 4 cloves garlic, chopped or pressed
- 2 (15 ounce) cans tomato sauce
-1 (6 ounce) can tomato paste
- 3 medium sized tomatoes, chopped (or one 28 ounce can diced tomatoes)
- 1/4 cup chopped fresh basil
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 1 Tbsp. dried oregano
- 1 tsp. dried ground thyme
- Dash red pepper flakes (or more if you want more heat)
- 1 Tbsp. raw honey (optional)
Equipment:
- Large skillet
- Cutting board
- Kitchen kife
- Garlic press
- Measuring spoon
- Can opener
- Slow cooker
- Stirring spoon
Directions:
1. Prepare vegetables. Melt lard/bacon fat or tallow in a large skillet over medium-high heat. Add chopped onion and garlic and saute for about 3 minutes. Add ground beef and ground sausage and brown the meat. Drain any excess fat.
2. Pull out your slow cooker and turn it on low. Add all of the ingredients and stir to combine. If you like your sauce a little sweeter use the raw honey, otherwise leave it out and add it later if needed.
3. Cook the sauce on low for 6-8 hours. Serve over zucchini noodles...spaghetti squash....an old sponge....really it will taste good on anything!
