PALEO HONEY MUSTARD CHICKEN WINGS

Having a party and don't know what paleo foods to prepare? Have no fear, for I am here to help. I present to you, delicious oven baked, paleo-friendly, honey mustard chicken wings.
Everyone has a secret to making the perfect wings. I like my wings a little crispy and that is hard to get when you bake them....unless of course you use this super secret technique. Well I guess it's not really a secret now since I am telling you. I have tried many ways to cook wings, but my favorite way is to steam the wings and then allow them to cool prior to baking them in the oven. This helps keep the inside moist and the outside crispy - thus creating the perfect wing.
You can use this same method and add any sauce you like, but this recipe is for a simple honey and mustard sauce that is loved by both kids and adults. You don't even need to have a party to make these...they are great for dinner...lunch....second lunch.....any time of the day really.

Ingredients:
- 2 pounds fresh chicken drumettes and wings
- 1/4 cup raw honey
- 1/4 cup spicy brown mustard
- 1/2 Tbsp. lemon juice
- Dash sea salt and ground pepper
Equipment:
- Large pot
- Steamer basket
- Small saucepan
- Baking sheet lined with aluminum foil
- Drying rack
- Oven Mitt
- Basting brush
Directions:
1. Preheat oven to 400F.
2. Place a steamer basket in a large pot and fill with a couple inches of water. Place the pot over medium high heat and bring to a boil. Add the chicken to a steamer basket, cover and allow to steam for 15 minutes.
3. Place the wings on a drying rack and set in the fridge for 45 minutes.
4. Place the drying rack on a foil lined baking sheet and bake for 20 minutes.
5. While the chicken is baking, place the honey, mustard, lemon juice and sea salt and pepper into a small saucepan over medium heat and stir until just combined.
6. After the 20 minutes is up, take the baking sheet out of the oven and coat each piece with the sauce using a basting brush. Place the baking sheet back in the oven and bake for another 20 minutes. Remove from oven and serve.
7. Hand everyone some napkins because things are going to get messy. Time to eat!
