PALEO PINEAPPLE COCONUT WHIP

Looking for an easy and refreshing dessert without the guilt? Look no further, I am here to help! I used to make these even before going paleo, I just used a little sugar instead of raw honey. They still taste just as great and make a delicious and easy treat.
Using a pineapple slicer makes quick work of this recipe. If you want to use the pineapple as bowls, just cut the very top off of the pineapple right at the base. Then cut the pineapple in half, use the pineapple slicer core and remove the fruit, and then use the two halves as bowls. I stuck a couple of the pineapple leaves in the side for garnish.
You can also add in other fruits like strawberry or lemon if you want to mix up the flavors. Experiment and have fun!

- 1 can full fat coconut milk
- 1 ripe pineapple
- 1 Tbsp. raw honey
Equipment:
- Ice cube tray
- Blender
- Medium sized mixing bowl
- Spoon
- Pineapple slicer
Directions:
1. Pour the coconut milk into an ice cube tray (I have also used silicone baking cups and they work just fine). Leave in the freezer until completely frozen (about 1-2 hours depending on your freezer).
2. Peel,core and slice the pineapple into chunks, and place in the freezer along with the coconut milk. I usually just put my pineapple in a mixing bowl in the freezer.
3. Once the coconut milk and pineapple are frozen, place all of the ingredients in the blender and blend until smooth. You can add a few regular ice cubes if you want more of a slushy consistency.
4. Pour into a bowl or pineapple half and enjoy!
