PALEO BAKED PEARS

Baked pears are something I never made before my switch to paleo. And that is too bad because I have been missing out on a delicious, warm treat for far too long. For some reason I always thought they were just a holiday dessert, but they are really great any time of year. I ran across some fresh pears at the farmers market, and decided I would bring them home and treat them right.
Baked pears are incredibly easy to make, and they taste amazing alongside some paleo ice cream. You can also try adding a few dashes of ground ginger or a squeeze of fresh lemon juice on them before baking. Cardamom or ground clove also makes a good substitute for the cinnamon. These are generally a dessert you will want to serve right away, so throw them in the oven right after dinner and they should be ready by the time everyone gets their second wind.
This recipe also works great with fresh peaches. Depending on how ripe they are they made new a few less minutes in the oven, so just keep an eye on them to make sure they don't get too tender.

- 4 bosc pears (about 1 1/2 pounds)
- 1/4 cup apple juice
- 2 Tbsp. raw honey
- 2 Tbsp. ghee
- 1 tsp. vanilla extract
- 1/4 tsp. ground cinnamon (optional)
Equipment:

- 8x11 glass baking dish
- Small saucepan
- Stirring spoon
- Oven mitts
Directions:
1. Preheat oven to 400F
2. Cut the pears in half and remove the core. Place the pears face down in a large baking dish.
3. Place the apple juice, ghee, raw honey, vanilla extract and cinnamon (optional) in a small saucepan over medium-high heat. Bring just to a boil, stirring occasionally.
4. Drizzle the sauce over the pears.Bake for 30-35 minutes or until pears are tender. Allow pears to sit for 5 minutes, then place on a plate, drizzle with the extra sauce and serve.
