PALEO COCONUT VANILLA ICED COOKIES

You want to know something? I don't like cookies. Yeah, I said it. They don't really do it for me. Put a plate of them in front of me and I will say..."meh". You could fill my house full of all kinds of cookies and I would rather have a glass of water instead. That's how apathetic I am towards them.
Unless, that is, those cookies happen to be THESE cookies... with their delicious vanilla icing, soft center and perfect chewiness. Who would have thought it would be a paleo cookie that would be my kryptonite? The nuttiness and the sweetness combine to make the perfect little morsel. I wake up in the middle of the night wanting them. My toddler will rip one of these right from my hand. From her own mothers hand!!!
Even non-paleo folks love these, so go ahead and bring them to a party and trick your friends into thinking they are some foreign delicacy. You can experiment with these cookies and try different flavorings (almond extract, cocoa powder, cinnamon, etc.).

Ingredients:
COOKIES
- 1 cup blanched almond flour
- 1/8 cup coconut oil
- 2 Tbsp. raw honey
- 1 tsp. vanilla extract
-1/2 tsp. sea salt
ICING
- 2 Tbsp. raw honey
- 2 Tbsp. coconut oil
- 1 tsp. coconut butter
- 1 tsp. vanilla extract
Equipment:
- Medium sized mixing bowl
- Fork
- Cookie sheet
- Cookie sheet liner or parchment paper
- Oven Mitt
- Wire cooling rack
- Small mixing bowl
- Spoon or Food processor
- Self restraint
Directions:
1. Preheat oven to 350F
2. Mix together all ingredients in a medium sized bowl using a fork. Make sure everything is well combined (this will form a thick batter). Note: If you warmed up your coconut oil and/or honey before mixing, place the batter in the fridge for about 20 minutes.
3. Line a cookie sheet and drop the batter by rounded tablespoon onto the cookie sheet. Press down lightly on the dough to form a flat, round shape (like a cookie ;-) ). Make sure that the edges are not split open too much.
4. Bake for 8-10 minutes or until the edges turn light brown. Remove from oven and allow cookies to cool for 10 minutes.
5. Transfer cookies to a wire rack. While cookies are cooling, mix the icing ingredients together in a small bowl using a spoon. If your ingredients are too hard to mix with a spoon you can use a food processor to combine them.
6. Once the cookies are completely cooled, spread a little of the icing on top of each one. I just use the back of the spoon to spread the icing, because that's how classy ladies do it. And try to refrain from eating all 12 at once....unless you are alone, then have at that. Good luck my friends.
