PALEO BREAKFAST CHIA PUDDING

If you are missing something similar to oatmeal for breakfast, then this paleo breakfast chia pudding is a great substitute. It's easy to throw together the night before, and you can put all sorts of different topping on it. You can also add a couple teaspoons of cacao powder to the pudding if you want to make it chocolate flavor!
I like to put mine into portable containers the night before work, put some toppings in another small container, and then take it with me for an easy breakfast. It also makes a great dessert or snack when you need something tasty and filling. It saves well in the refrigerator for a few days, so you don't have to eat it all right away if you don't want to.

Ingredients:
FOR THE PUDDING
- 1 can (13.5 oz.) full fat coconut milk
- 1/4 cup almond milk
- 2 Tbsp. raw honey
- 1 tsp. vanilla extract
- ¼ cup chia seeds
TOPPING IDEAS:
- 1 banana, sliced
- 1 cup strawberries, hulled and sliced
- ¼ cup sliced almonds, toasted
- ¼ cup shredded coconut, toasted
- ¼ cup raisins
- Drizzle of raw honey
Equipment:
- Medium sized mixing bowl
- Can opener
- Stirring spoon
Directions:
1.The night before, combine coconut milk, almond milk, raw honey, vanilla extract and chia seeds in a medium sized mixing bowl. Let sit for 15 minutes then stir. Cover bowl and refrigerate overnight.
2. The next morning, spoon into 4 bowls and top with your favorite toppings. Drizzle with a little more raw honey if desired and serve.
