PALEO CHICKEN SALAD

Chicken salad is great to make when you have leftover chicken, but sometimes it is a pain to make chicken just for chicken salad. But do not worry my friends, for I have a solution for you. It's actually a great way to make shredded chicken for any recipe. Throw your boneless, skinless chicken breasts in a large skillet over high heat and cover with water. Bring to a boil, place lid on skillet and reduce heat to low. Cook for 30 minutes and transfer to a cutting board to cool for about 30 minutes. Then get to shredding. That simple.
You can substitute an equal amount of ripe avocado in place of the mayonnaise if you dislike it or want to try something new. And if you have picky eaters in your house who don't like certain things, like celery perhaps (you know who you are), then just leave that item out. It will still taste great.
Or just make it the way you like it and tell them to make their own darn chicken salad.

Ingredients:
- 1 1/2 pounds cooked chicken breasts, shredded
- 1 1/2 cup paleo mayonnaise
- 1/2 cup finely chopped bell pepper (I like a mix or red and yellow)
- 1/2 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup finely chopped water chestnuts
- 1/2 tsp. sea salt
- 1/4 tsp. ground pepper
- 1/2 tsp. paprika
Equipment:
- Cutting board
- Chopping knife
- Large mixing bowl
- Spoon
- Plastic wrap
Directions:
1. Combine all ingredients in a large mixing bowl and combine until all ingredients are coated. Taste and add more seasonings to your liking.
2. Cover bowl and chill in fridge for at least 1 hour.
3. Grab the biggest spoon you can find, plop yourself down on the couch, and eat this all by yourself. Right out of the mixing bowl. Or share some with your friends and family if they are staring. Greedy bastards.
