PALEO RAINBOW SMOOTHIE

Smoothies make a delicious meal or supplement to a meal, and they are a nice sweet treat without the guilt. They are fairly inexpensive to make and only take a couple minutes to whip up. All it takes is some fruit and a blender or food processor and you are set!
I always feel great after having a homemade smoothie with fresh organic fruits and vegetables and homemade almond milk. It's a great way for me to add more nutrients to my diet in a delicious and easy way. You can add blackberries, raspberries, pears, avocado, kale, or any other fruits or vegetables you like.
I like to blend the different fruits separately and then pour them into the glass one at a time, so that is makes a rainbow of colors in the glass. It makes a pretty presentation, and it also makes each sip taste a little different, which is fun. But if you don't care about any of that, just throw it all in a blender enjoy! It still tastes just as great.

- 1 cup fresh strawberries, stems removed
- 1 cup fresh blackberries or blueberries
- 1 fresh banana
- 2 cups fresh spinach
- 3/4 cup almond milk (or full fat coconut milk)
Equipment:
- Blender or food processor
Directions:
1. Wash and dry the spinach and berries.
2. If you want to create different colored layers, blend the strawberries and 1/4 cup of almond milk first and pour into glasses. Blend the blackberries and a 1/4 cup of almond milk next and pour on top of the strawberries. Lastly blend the banana and spinach along with the remaining almond milk and pour on top of the blackberry mixture. Serve.
