PALEO FRESH FRUIT GRANITA

A granita is an Italian dessert usually made from ice, sweeteners and various flavorings. It is similar to a sorbet expect it is made by hand and is not churned, so the ice crystals are slightly larger.
A granita is the perfect treat when you want something refreshing on a hot day. And the best part is that you don't need a fancy ice cream maker to create it! All you need is a food processor or blender, a freezer and a fork!
The sky (or the fruit) is the limit when it comes to what different flavors you can create. Use your favorite fresh berries such as strawberries, blueberries or blackberries, or your favorite seasonal fruits such as oranges, pineapple, mango, kiwi, peach, banana, honeydew or watermelon. You can even combine different fruits to make a delicious and unique treat.

Ingredients:
- 2 cups fresh berries (or your favorite seasonal fruit)
- 2 Tbsp. raw honey
- 1 Tbsp. fresh lemon juice
- 1 cup ice
- Fresh mint (optional)
Equipment:
- Measuring cups
- Measuring spoons
- Blender or food processor
- Baking dish
- Fork
Directions:
1. Blend the fruit, raw honey, lemon juice and ice in a food processor or blender until smooth.
2. Pour into an 8x8' baking dish and place in the freezer for 30 minutes. Scrape the mixture with a fork until very slushy, and then return to the freezer for another hour (or until set).
3. Spoon into dishes and serve with a garnish of mint (optional)
