PALEO STRAWBERRY LEMONADE

Lemonade is such a perfectly refreshing drink. This recipe is easy to throw together, and gets even easier if you have a citrus juicer handy. I find that I get more juice out of the lemons if I roll them firmly by hand on the counter before I juice them. Just apply a little pressure and roll them back and forth before you slice them in half.
Everyone likes a different level of sweetness and tartness in their lemonade, so make sure to start off with less raw honey and then adjust the amounts after tasting the combined ingredients. The strawberries will add some natural sweetness, or you can leave out the strawberries if you just like your lemonade plain. I like mine pretty sweet so I use the strawberries AND add more honey than most people probably would. I like my drinks strong and sweet, like I like my men.
Make sure you choose a raw honey that doesn't have a strong flavor to it because it will overpower the drink. The lemonade tastes better after you let it sit in the fridge and fully chill, so let it hang out for a few hours and do it's thing.

- 1 1/2 cups lemon juice (about 8-10 lemons)
- 8 cups water
- 1 cup raw honey (add more if you like sweeter lemonade)
- 1 pint strawberries, washed and stems removed
Equipment:
- Cutting board
- Kitchen knife
- Citrus juicer
- Food processor
- Medium saucepan
- Pitcher
- Stirring spoon
Directions:
1. Squeeze the lemon juice and prepare the strawberries.
2. Puree the strawberries in a food processor until smooth.
3. In a medium saucepan over medium-high heat, combine lemon juice, 1 cup of water, the raw honey and the strawberries. Bring just to a boil, stirring to make sure it is well combined.
4. Pour the remaining 7 cups of water into a pitcher. Add the lemon-strawberry mixture and stir to combine. Taste the lemonade to see if it needs any modifications. If too sweet, add a little more water and lemon juice. If too sour add a little more water and raw honey. If too plain add more lemon and honey.
5. Refrigerate for a few hours until chilled. Serve over ice.... or just chug it straight from the pitcher in the fridge. I wont tell anyone.
