PALEO BANANA CINNAMON WAFFLES

What's that? You love waffles? I do too!!!
Ok before anyone goes crazy and gets all uppity, I will throw out my disclaimer. These are paleo treats, to be enjoyed on occasion and not to be eaten every morning. They are delicious treats ...treats that you will WANT to eat every single day...all day....but resist the temptation people! Get control of yourselves for goodness sake. Or just stuff your face and tell anyone who has an issue with it to shush. That's usually what I do.
This recipe makes 4 thick waffles in my Belgian waffle maker. Everyone's waffle makers are different so your cooking times and number of waffles will vary. Don't blame me, blame the waffle maker industry. Write them a strongly worded email if you feel like it. Just make sure to coat your waffle iron with oil before putting the batter in, and keep an eye on them so they don't burn. Because a burnt waffle is a horrible way to start your day.

WAFFLES
- 4 large eggs, room temperature
- 1 large ripe banana
- 1 cup full fat coconut milk
- 1/3 cup coconut oil, warmed if solid
- 2 tsp. vanilla extract
- 2 Tbsp. raw honey
- 1/2 cup coconut flour
- 1/4 cup blanched almond flour
- 1/2 cup + 2 Tbsp. tapioca flour
- 2 tsp. ground cinnamon
- 1 tsp. sea salt
- Melted coconut oil (to grease waffle iron)
HONEY CINNAMON SYRUP
- 1/2 cup coconut oil, warmed if solid
- 1/2 cup raw honey, warmed if solid
- 2 tsp. vanilla extract
- 2 tsp. ground cinnamon
- Sliced bananas (optional topping)
Equipment:
- Measuring cups and spoons
- Blender or Food Processor
- Waffle Iron
- Basting brush (if basting waffle iron with oil)
- Small saucepan
- Stirring spoon
Directions:
TO MAKE THE WAFFLES:
1. Combine all waffle ingredients in a blender and blend until smooth. Allow the batter to sit for about 10 minutes and then blend again for about 3 seconds before using.
2. Coat your waffle iron with a little bit of coconut oil to prevent everything from sticking.
3. Pour enough batter to just cover the bottom of the waffle maker, close and cook until light brown. Each waffle maker will vary by size and cooking time so keep an eye on the waffles to make sure they do not burn.
TO MAKE THE HONEY CINNAMON SYRUP:
1. Melt all topping ingredients together in a small saucepan and stir until just combined.
2. Drizzle over waffles, top with sliced bananas (optional) and enjoy!
