PALEO SAUSAGE AND VEGETABLE BAKE

Here is another easy, one-dish meal for all of you who are short on time but still love food with flavor (just like me!). I love this meal because you just chop, throw everything into a pan and bake. It's that easy! One pan to clean up...now that's what I am talking about!
You can get creative with the vegetables, herbs and spices you use in this dish, so feel free to mix and match with your favorites! I used a mixture of 2 chicken and 2 pork sausages from my local natural food store to make this dish, but you can use whatever kind of sausage you like (chicken, pork, beef, etc.).

Ingredients:
- 2 medium apples, peeled and chopped into 1" pieces (any kind you like)
- 3 cups chopped butternut squash
- 1 small red onion, peeled and quartered
- 1 large sweet potato, peeled and chopped into 1" pieces
- 3 cloves garlic, chopped
- 1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- 4 Tbsp. extra virgin olive oil
- 4-5 large uncooked sausages (your favorite variety)
Equipment:
- Cutting board
- Kitchen knife
- Vegetable peeler
- 9x13 glass baking dish
- Measuring spoons
- Measuring cups
- Mixing spoon
Directions:
1. Preheat oven to 375F. Place the apples, squash, onion, sweet potato in the pan and stir. Sprinkle with the spices and drizzle with the olive oil and toss to coat.
2. Place the mixture in the oven and bake for 20 minutes. Re move from oven, toss the vegetables and place the sausages on top. Return to the oven and bake for another 20-25 minutes until sausages are cooked through and the vegetables are tender. You can place the pan under the broiler for a minute or two if you want your sausages and vegetables browned a little more.
3. Remove from oven, slice sausages (if desired) and serve.
