PALEO KELP NOODLE "RAMEN" SOUP

I have a few ways I judge if a recipe I make is worth posting. One is just whether I like the taste or not...but more importantly is how quiet it is at the dinner table (meaning everyone is busy eating and too busy stuffing their face to talk), and if anyone goes for seconds. With this recipe it was very quiet at the table (except for slurping) and everyone had a second helping, so I knew it was a winner.
Kelp noodles make a nice substitute for most Asian noodles and can usually be found at your local Natural Foods store or can be ordered off of Amazon or the manufacturers website. Some brands of kelp noodles can be very long, so you may want to slice them shorter before cooking them. Otherwise you get one big noodle tangle and that isn't so fun.
This recipe is very versatile and is easy to throw together because it doesn't require too much prep work or monitoring of the food while cooking. It works great if you have some leftover proteins you want to use up such as chicken, beef or pork. My favorite protein to serve with this with Char Siu (Chinese BBQ Pork). You can also add additional vegetables such as sliced radishes, carrots, bamboo shoots, spinach, or bok choy. Serve this with some chili oil or hot sauce for some extra heat.

- 6 cups chicken stock
- 1 tsp. fresh grated ginger
- 1 Tbsp. fish sauce
- 1 tsp. chopped garlic
- 1 package kelp noodles, rinsed (12 oz.)
- 4 oz. shiitake mushrooms, cleaned and sliced
- 1/3 cup green onion, chopped
- 1/4 cup cilantro, chopped
- 2 large eggs, whisked
- Sea salt (to taste)
- Ground black pepper (to taste)
- Protein of choice (optional, I use char siu)
- Hot sauce (optional, for serving)
Equipment:
- Large saucepan
- Chopping board
- Kitchen knife
- Stirring spoon
- Ladle
Directions:
1. Place the chicken stock in a large saucepan over medium high heat. Add the ginger, fish sauce, garlic and kelp noodles and bring to a boil. Allow to lightly boil for about 20-25 minutes or until the kelp noodles begin to soften.
2. Add the mushrooms and eggs to the pot and allow to boil for another 3-4 minutes. Taste and add sea salt and ground black pepper to your liking.
3. Ladle the soup into bowls and top with green onion, cilantro, and your protein of choice. Serve with your favorite hot sauce and enjoy!
