PALEO CHOCOLATE BANANA PUDDING

Are you looking for a really easy, no bake dessert option that includes chocolate? Well look no further my friends!
This dessert isn't anything groundbreaking, but it was a result of me scrounging around my fridge and cupboard for something sweet. It is rare that I crave sweet things, especially chocolate, but I was in the mood for a little chocolate pudding action and so this is what I came up with. It's easy and delicious and you don't have to bake a thing!
This recipe requires that you have a can of coconut milk left in your fridge for a few hours so that the milk and cream can separate. The cream portion is thicker and is what you mix to get the "whipped cream". I always keep a can or two in my fridge for when I need them.
Make sure to use a brand of coconut milk that does not contain any additives or preservatives, otherwise the cream may not separate from the milk. A lot of people ask if you can just use a can of coconut cream, and if you can find one without any extra additives or preservatives then it should work just fine. Enjoy!

- 1 can (14 oz) full fat coconut milk, left in the fridge for 6 hours or more
- 4 Tbsp. raw honey
- 1 tsp. vanilla extract
- 1 large ripe banana (save 2 small sliced for garnish if you like)
- 2 Tbsp. cacao powder (plus a little extra for garnish if desired)
Equipment:
- Hand mixer
- Measuring spoon
- Medium sized mixing bowl
- Blender or Food processor (optional)
Directions:
1. Place the can of coconut milk in the refrigerator for at least 6 hours (or overnight). This will cause the cream to separate from the milk.
2. Open the can of coconut milk and scrape out the thick cream into a medium sized bowl. Hint: I always open the can from the bottom and pour the milk out into a separate container before scraping out the cream. You can use the saved milk for smoothies and other recipes.
3. Add the vanilla and raw honey and whip the cream with a hand mixer until fluffy. Take 1/3 of the whipped coconut cream and set it aside. Add the ripe banana and 2 Tbsp. cacao powder to the rest of the coconut whipped cream and blend together either with the hand mixer or using a food processor/blender. Blend until you get a smooth consistency.
4. Place the pudding into the bottom of a glass and top with the remaining whipped coconut cream. Garnish with a dash of cacao powder and a slice of banana if desired. Enjoy!
