PALEO GUACAMOLE

Guacamole is pretty much a staple at any event I throw. I am an avocado addict and I will use any excuse to eat them, and this recipe happens to be one of my favorites. It is easy to throw together and everyone loves it, so it makes for a great party dish.
I like to serve guacamole with some fresh chopped vegetables, or make it to go with tamales, empanadas, carne asada ... you get the idea. If you're craving a tortilla, you can try out my paleo tortilla recipe too!
I like my guacamole on the spicy side, but you can make it mild by leaving out the cayenne pepper. If you want even more heat you can add in a freshly seeded and chopped jalapeno. Guacamole is best when served the same day, and I have never any left over to try and store, but I have heard that pouring a tiny bit of water over the guacamole and placing it in a sealed container in the fridge will keep it fresh and green overnight. One of these days I may have some leftover to try this idea, but until then, please enjoy this recipe!

- 2 cloves garlic, minced
- 1 medium tomato, chopped
- 1 small white onion, chopped
- 1/2 lime, juiced
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. cumin
- 1/2 tsp. cayenne
- 1 Tbsp. chopped fresh cilantro
Equipment:
- Large mixing bowl
- Garlic press
- Citrus juicer
- Cutting board
- Kitchen knife
- Masher
- Mixing spoon
Directions:
1. Place avocado, lime juice and seasoning in large mixing bowl and mash until combined and the desired consistency is reached. If you like your guacamole smooth, make sure to mash until the large chunks are gone. If you like it chunkier, then minimal mashing is necessary (you really can't go wrong either way!)
2. Add the remaining ingredients to the mixing bowl and stir just until combined. Serve with your favorite chopped vegetables for dipping.
