PALEO WATERMELON-LIME AGUA FRESCA

Agua frescas (Spanish for "fresh water") are refreshing drinks usually infused with fruit or flowers, and commonly found throughout Central America, Mexico, and the U.S. You may have seen then before at restaurants, stored in beautiful glass jars and served with a ladle.
These paleo friendly beverages are great for summer and only take a few minutes to make. They are best when served the same day but you can store them in the fridge for another day or two if needed.
This recipe uses fresh watermelon, but honeydew melon, mango or fresh strawberries are also a good options if you want to try some other fun flavors! And if you are so inclined, I have "heard" that this can be quite delicious when mixed with a little tequila ;-)

- 1 small seedless watermelon, rind removed and chopped (about 4 cups)
- 1 cup cold water
- 2 Tbsp. fresh lime juice
- 2 Tbsp. raw honey (warmed slightly if solid)
- Ice
- 4 sprigs fresh mint
Equipment:
- Cutting board
- Kitchen knife
- Measuring spoons
- Blender or Food Processor
- Strainer/Sieve
- Citrus Juicer
Directions:
1. Place chopped watermelon in a blender and puree until smooth. Strain through a sieve to remove excess pulp and any small seeds.
2. Place the watermelon juice and remaining ingredients back into the blender and blend 30 seconds or until fully combined. Taste and add additional lime juice if desired. Serve over ice with a sprig of fresh mint.
