PALEO BACON WRAPPED ASPARAGUS

So bacon wrapped asparagus isn't exactly a "mind-blowing" recipe, and I am the first to admit that asparagus cooked on its own is quite delicious. But there is something about the saltiness and the crispiness of the bacon that just goes so well with the asparagus, and makes a nice change from the regular style of cooking it. Add some fresh squeezed lemon on top and I am in bacon-wrapped heaven.
If you are using thick-cut bacon you may want to pre-cook the bacon for a few minutes in a pan or the oven before wrapping it around the asparagus, or the asparagus may get overcooked. Or you will have soggy bacon. Either way, nobody wants that!
When buying asparagus, look for asparagus with bright green stalks with purple-tinged tips. After I cut the end of the stalks off I like to use a potato peeler to gently remove the thicker layer of skin from the stalk to make the asparagus more tender, but that is just a personal preference and you can prepare your asparagus however you like!

- 10 pieces of nitrate-free bacon, cut in half
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. extra virgin olive oil
- Ground black pepper
- 1 lemon, quartered (for serving)

- Aluminum foil
- Cutting board
- Kitchen knife
Directions:
1. Preheat oven to 400F. Wrap one half-slice of bacon tightly around each piece of asparagus and place on a baking sheet covered in aluminum foil.
2. Drizzle the balsamic vinegar and olive oil over the asparagus and sprinkle with a few dashes of ground black pepper.
3. Bake for 15 minutes, then flip each asparagus over and bake for another 10-15 minutes or until the bacon is crispy.
4. Serve right away with lemon wedges on the side.
