PALEO SPICY SMASHED SWEET POTATOES

I really love sweet potatoes. They are full of vitamins and minerals and they taste good plain. They taste REALLY REALLY good, however, when you chop them into little circles of love, give them a little squish, and top them with some sweet and spicy goodness. Creamy on the inside and crispy on the outside....sounds delicious right? Well they are.
This is another recipe that you can tailor to your taste buds by adjusting the spices. These do not have a lot of "heat" to them, but you definitely get a lot of flavor. Too much spice will overpower the natural flavorof the sweet potato so don't go overboard.
You can cook the sweet potatoes a variety of ways prior to the squishing/spicing/broiling part (for example, peel, chop and boil them until almost cooked through). I like to throw them in the oven while I am preparing whatever main dish I am serving them with because that is the easiest

Ingredients:
- 3 medium sized sweet potatoes (about 1 1/2 pound total)
SPICE MIXTURE
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. paprika
- 1/2 tsp. sea salt
- 1/8 tsp. ground black pepper
SAUCE
- 1 Tbsp. raw honey
- 2 Tbsp. extra virgin olive oil
Directions:
1. Preheat the oven to 400F. While the oven is heating up, mix together all ingredients for the spice mixture in a small bowl and set aside.
2. Poke a few holes in each sweet potato and place directly on the oven rack. Cook for 25-35 minutes or until the sweet potato are just tender but not mushy (the cooking time will vary depending on how thick the potatoes are)
3. Take the potatoes out of the oven, turn the oven to broil, and then carefully peel off the skin. Cut the potatoes into 1 1/2 inch slices and place on a cookie sheet a few inches apart.
4. Take a cup or something with a flat bottom and gently press down on each sweet potato circle until the sides split open slightly. This will allow the edges to get nice and crispy later. Mix the raw honey and olive oil in a bowl and use half of the mixture to drizzle over all of the sweet potatoes. Take half your spice mixture and sprinkle some over each sweet potato.
5. Return the potatoes to the oven and broil for 3 minutes. You want the edges to caramelize and turn a nice dark brown color, but keep an eye on them often so they do not burn. Take the pan out and flip each potato over carefully. Drizzle the remaining sauce over the sweet potatoes as then the remaining spices. Return to the oven and broil for another 3-4 minutes. Remove from oven and serve.
