PALEO COCONUT-LIME POPS

Coconut and lime is one of my favorite flavored popsicles. They are so refreshing in the summer and they are the perfect combination of creamy, sweet and a little tart. You can adjust the amount of honey and lime juice to suit your taste, and they really couldn't be much easier to make. My kids prefer fresh fruit pops, but for me these are a delicious treat!
I love these grooved molds for making popsicles because they are a great price and last forever. They are well made, dishwasher safe, and the plastic is BPA-free. The sleeves are a nice thick plastic that slide easily on and off, so you have keep the popsicles colder longer outside of the freezer, and you can slip it back on and save it in the freezer if you want to finish the rest of one later.
I like the use this coconut cream because unlike most brands it contains 100% coconut cream with no additives or preservatives. Full fat coconut milk will also work well for this recipe.

- 3 cups coconut cream (or full fat coconut milk)
- 1/4 cup raw honey (warmed if solid)
- 4 Tbsp. fresh lime juice (about 4 medium limes)
Equipment:
- Measuring cups
- Measuring spoons
- Citrus Juicer
- Mixing bowl
- Whisk
- Popsicle Molds
Directions:
1. Place all ingredients in a medium sized mixing bowl. Whisk until well combined. Taste and add additional honey or lime juice if desired.
2. Pour into ice pop molds and freeze for 4 hours or until frozen solid. To serve, run pops under warm water to loosen clear sleeve, remove sleeve and serve right away.
