PALEO FRESH FRUIT POPSICLES

Making your own fruit pops at home is easy, and the flavor combinations you can create are endless. The great thing about making them at home is that you control what goes in them (no nasty preservatives or additives).
When making popsicles for myself I love to try new flavors like grapefruit and mint, blueberry and peach, coconut and lime, or lavender and lemon. But my kids always request the same kind... Mango and Strawberry. Which is still fine by me since those happen to be two of my favorite fruits anyway.The great thing about this recipe is you can try out whatever fruits you like, and it's nearly impossible to screw this one up.
I love these bug shaped popsicle molds because they are a fun shape for kids (and adults) and they are easy to hold. I also really like the grooved molds. Both of them are well made, dishwasher safe, and the plastic is BPA-free. The sleeves are a nice thick plastic that slide easily on and off, so you have keep the popsicles colder longer outside of the freezer, and you can slip it back on and save it in the freezer if you want to finish the rest of one later.

- 5 cups chopped fresh mango or strawberries
- 4 Tbsp. raw honey
- 1 cup water
Equipment:
- Small saucepan
- Measuring cup
- Measuring spoon
- Popsicle molds
- Blender or Food Processor
Directions:
1. To make a simple syrup, place the water and raw honey in a small saucepan over medium-high heat. Bring just to a boil and then reduce heat to low and allow to simmer for 5 minutes. Remove from heat and set aside to cool for about 10 minutes.
2. Place the fresh fruit and the simple syrup in the blender or food processor and blend until smooth. Spoon or pour into the popsicle molds and stick in the fridge for 4 hours or until frozen.
3. Once frozen, run the molds under a little warm water and gentle pull the pop out of the mold and serve.
