PALEO MANGO LASSI

I really love tropical fruits, and I am always excited to find new ways to integrate them into recipes. A Lassi is traditionally a yogurt based beverage that is popular in India and Pakistan. It can be made either savory or sweet and usually has a milkshake-like consistency. This version is sweet, and substitutes coconut milk for yogurt. It is a rich and creamy drink and goes great with spicy dishes, or served as a dessert.
You can add a dash of cardamom, or crushed pistachios to the top of the beverage, or mix in a squeeze of fresh lemon juice to add a little zing. Mango's are sometimes a pain in the rear to peel and cut. They are slippery and the pit is hard to distinguish from the flesh of the fruit. The best way I have found is to use a vegetable peeler to take off the skin, then cut off the very top and bottom part of the mango. Stand it up and stick a corn holder into the top. Hold onto the corn holder and use a kitchen knife to slice around the edges to trim the fruit away from the pit. Voila, you have some nice mango slices and no wounds to show for it. Pat yourself on the back and reward yourself with a delicious drink.

- 1/2 cup ice
