I can eat eggs almost every day, and I pretty much do, but even I get tired of them! Below are some egg-free paleo breakfast ideas to help get you out of the egg breakfast rut!
Paleo Sweet Potato Hash - This is a delicious breakfast recipe that is full of protein and will help keep you full until lunch. Bacon...avocado...sweet potato...what's not to like?!?
Leftovers - There is no reason why you have to eat typical "breakfast foods" in the morning! Leftovers make a great breakfast. A few of my favorite meals to eat as a leftover are Paleo Chicken Piccata, Paleo Mongolian Beef, or Paleo Meaty Spaghetti.
Smoothie - Smoothies make a great breakfast option and are easy and quick to throw together. This Paleo Rainbow Smoothie is one of my favorites!
Breakfast Chia Pudding - If you miss oatmeal, this Paleo Breakfast Pudding is a great substitute. Make it the night before for an easy grab-and-go breakfast!
Banana and Almond Butter - Banana slices topped with almond butter are a delicious treat and only takes a few seconds to assemble.
Chicken Nuggets - For breakfast? Why not?!? Paleo Chicken Nuggets are a great way to start your day (and they are kid friendly too)!
Treats - Every now and then it's ok to make a paleo treat for breakfast, such as Paleo Pancakes or Paleo Waffles. I like these Paleo Blueberry Muffins because they are easy to grab when I am in a hurry. If you are feeling extra creative, try some Paleo Danish Stuffed Pancakes or Paleo Cinnamon Rolls!
Protein, Mushroom, Tomato & Spinach Scramble - Not all scrambles require eggs! Just throw some choped chicken, sausage, ground beef or steak into a pan along with some sliced mushrooms and spinach and saute until heated. Season with a little salt and pepper, top with some chopped tomatoes and enjoy!
Chicken Salad - This Paleo Basil Avocado Chicken Salad is easy to throw together and has plenty of protein and healthy fat!
Soup - Soup is another great breakfast option that doesn't require much work. One of my favorite things to do is take chicken or bone broth, canned coconut milk, a tsp. or two of thai curry paste and heat it up. You can add any leftover protein and vegetables you have laying around as well. Some of my other favorite soups are Paleo Zuppa Toscana or Albondigas.
Sausage and Avocado Slices - An avocado and a side of protein (sausage, bacon, chicken breast, etc.) makes a great breakfast and is also easily portable.
Salad - It may sound funny, but many people start their day off with a large salad. One of my favorites is a Paleo Cobb Salad with Paleo Celery Seed Dressing. You can use whatever vegetables and proteins you have available to make a delicious breakfast salad!
Lastly, if you want to eat eggs but are just tired of the flavor, try mixing it up by adding things like hot sauces, salsa, peppers, onion, etc. to the eggs to help enhance the taste and trick your taste buds into thinking you are eating something else!
